If meat loaf evokes memories of home-cooked meals, you don't have to give it up just because you're dieting.
Ingredients:
1 egg white
1/4 c catsup
1/4 c finely chopped onion
1/4 c finely chopped celery
1/4 c shredded carrot
1/4 c fine dry bread crumbs
1/4 c skim milk
1/4 teaspoon pepper
1/8 teaspoon salt
1 pound Lean ground beef
2 tablespoons catsup
Directions:
1. In a large mixing bowl, combine egg white, 1/4 c catsup, onion, celery, carrot, bread crumbs, milk, pepper, and salt. Add ground beef and mix well. In a shallow baking pan or dish pat the meat mixture into a loaf.
2. Bake in a 350 degree oven for 45 to 50 minutes or until no pink remains. Spread the 2 tablespoons of catsup over the top of the loaf. If desired, serve with additional catsup.
To add a Mexican flare, substitute salsa for the catsup.
Makes 6 servings.
